Follow-up Friday: Red Butte Cafe

After spending something like 7 years of my life working in a few different offices, I can tell you that I’ve experienced my fair share of catered lunches.  There’s nothing like choking down a soggy sandwich made hours before, accompanied by a droopy salad drenched in who knows what.  Not exactly appetizing to say the least.  All of the Sassies were grateful that this all too familiar scenario was definitely NOT the case for our lunch at the Utah Museum of Natural History provided by Red Butte Cafe Catering in Salt Lake City, UT.

The sandwiches were large, large enough you had to mash them down just to take a bite, not a problem for someone like me whose mouth is ginormous enough to handle such things.  The bread on my sandwich was some variety of whole wheat and tasted good, there was a healthy amount of fresh toppings, and my favorite part: the dressing was left on the side to be added at your own discretion.  Because let’s be honest, there’s nothing worse in this world than a soggy sandwich.  Accompanying these tasty sandwiches was their crazy Greek pasta salad that I’ll be honest, made me a little nervous to look at what with all of the different genres of pasta, veggies cheese and meat going on there.  Like Evonne said, there were some crazy textures happening and it was certainly nothing we’d ever seen before, but it ended up coming together in a perfect combination of flavors, even my 15 month old dug it and he’s a tough customer.

In conclusion, the sandwiches were large and tasty, the salad surprising and flavorful.  Throw in some kettle chips and cookies from My Dough Girl and I’d say you’ve got all the deliciousness of a successful catered lunch.  Well done Red Butte Cafe and thanks a million for catering to the Sassies!  Perhaps next time I’m in the area I’ll stop by and sample the rest of your menu, my interest has certainly been piqued.
